Introducing La Tourangelle California Gourmet oils

The production of gourmet oils is a time-honored tradition in France. Originally, each village had a mill which roasted and extracted the oil from nuts gathered by local farmers. These delicious oils were used in hearty rustic fare and were also found in Paris’ finest restaurants.

La Tourangelle is one of just a handful of these remaining mills that keep this tradition alive. Through a partnership between one of the oldest and most respected French artisanal oil mills, Les Huileries de la Croix Verte et la Tourangelle, based in Saumur, France, and California Oils Corporation, La Tourangelle has succeeded in recreating the spirit of a traditional french oil mill in America.

Located in Woodland, California, La Tourangelle produces and distributes an exclusive line of hand-crafted premium quality oils, supplying high-quality product at a reasonable price.
Products

Roasted Walnut Oil
Produced in California, this flavorful oil is perfect for salads, pasta, grilled meats, baking or just on its own with bread. We produce our walnut oil strictly following the traditional method of our French parent company in order to achieve a delicate roasted walnut taste.

Roasted Hazelnut Oil
This oil is best when drizzled on salads, baked into cakes or with bread. Hazelnut oil is often compared to olive oil because of its similar health benefits.

Roasted Almond Oil
La Tourangelle's Almond oil has a unique roasted almond flavor that is delicious for salads, dipping or baking.

Grapeseed Oil
The high smoke point of this oil makes it a chef’s favorite for low-grease frying and sautéing. A natural byproduct of the wine-making process, it is flavorless and incredibly versatile.

Roasted Pistachio Oil
Produced in California in very small batches using century old traditional production methods. Our Roasted Pistachio oil has a unique deep roasted pistachio flavor that is delicious for salads, dipping, baking and to enhance any dish.

Roasted Pecan Oil
Produced in California in very small batches using century old traditional production methods. Our Roasted Pecan oil has a unique deep roasted pecan flavor that is delicious for salads, dipping, baking and to enhance any dish.

Avocado Oil
Avocado oil is one of few vegetable oils not derived from seeds; it is pressed from the fleshy pulp surrounding the avocado pit.

Black Truffle Infused Oil
La Tourangelle's premium grapeseed oil infused form Black Truffles.

White Truffle Infused Oil
La Tourangelle's premium grapeseed oil infused form White Truffles.

California Walnut oil cracks Hall of Fame
San Francisco Chronicle "The toasty, nutty taste of La Tourangelle so impressed the tasters that they awarded this oil 89 out of a possible 100 points -- enough to catapult La Tourangelle into the Taster's Choice Hall of Fame, for products that score 80 or more in a blind tasting." La Tourangelle Roasted Walnut Oil beat their closest competition by 20 points. June 2005

La Tourangelle Grapeseed Oil.

Grapes have seduced humans for centuries with their fabled red and white nectars. But they have another aspect too: When pressed, tiny grapeseeds yield green-colored oil with remarkable properties. Grapeseed oil has a light flavor and contains a high level of polyunsaturated fat. It can also be heated up to 485°F, making it the ideal healthy cooking partner.

Usage
The kitchen is where grapeseed oil comes into its prime. With a smoke point of 485°F, the oil is easy to use in cooking and will make burnt oil a thing of the past. The nutty flavor works well in vinaigrettes with any type of vinegar, never overwhelming the other ingredients. Grapeseed oil is also commonly blended with more intensely flavored oils. Another fact to keep in mind is that grapeseed oil is an excellent substitute for butter or canola oil.

Health benefits
As one of the richest natural sources of linoleic acid, grapeseed oil can do wonders when it comes to fighting heart disease and bad cholesterol. Linoleic acid is a member of the polyunsaturated fatty acid family. These fatty acids tend to blend with cholesterol in the blood and transform it into something the body knows how to get rid of. Grapeseed oil is also used in skin products, aromatherapy and cosmetics.

Production process
Wine production is a cherished tradition in France, Italy, Spain, California, Chile and now all over the world. There are events commemorating the annual harvest and every step in the winemaking process. Lost in all the commotion, however, is a little secret: Once they have finished making their wine, the winemakers gather all the seeds, dry them and bring them to their local oil mill. There, a somewhat arduous process begins. Since the seeds are so tiny and abrasive, powerful machines are required to crush them. The process is very time-consuming since the seeds contain less than 10% oil. Imagine the vast quantity of seeds needed to produce one drum of oil!

La Tourangelle Roasted Pistachio Oil

La Tourangelle handcrafts this Roasted Pistachio Oil in Woodland, California strictly following the 150-year-old traditional methods of its French sister oil mill. Slowly roasted to perfection, expeller-pressed and lightly filtered, this oil adds a rich pistachio taste to salad dressing, pasta, grilled meat or fish, baked pastries, and is perfect to dip with bread.

Usage
Pistachio oil is a delicious and easy-to-use oil. In salads, pistachio oil mixes very well with balsamic vinegar or red wine vinegar to create a simple but flavorful vinaigrette. Also try it with tarragon white vinegar. It is also delicious on grilled fish or meat: A dab of pistachio oil is the perfect touch for enhancing flavors and easing digestion when added towards the end of your beef bourguignon or meat dishes. You can also try it in pasta with cheese. Don't hesitate to use it in cakes and baked goods, particularly with apples or pears.

Temperature
Suitable for medium heat: Perfect for sautéing, baking, dipping, blending into a dressing/sauce, or drizzling on a finished dish.

Health benefits
La Tourangelle Pistachio Oil contains low level of saturated fat, high levels of monounsaturated fatty acid, but it usually also has a decent amount of linoleic fatty acid. This balance makes for a very healthy oil that will help to protect your heart and fight against bad cholesterol.

Production process
La Tourangelle is the first oil mill in California to produce pistachio oil using traditional French methods. After harvesting, the San Joaquin Valley pistachios nuts are washed, sorted, sun-dried for several days and stored for further drying. The pistachio kernels are then ground and roasted in cast-iron kettles. The resulting warm paste is pressed in a hydraulic press. Following mechanical extraction, the oil is lightly filtered and bottled. The oil has intense pistachio flavors and a luxurious, dark green color.

* This oil is processed in a plant that also processes other tree nuts.
